Roasted Chicken with Lemon Zest & Rosemary Sea Salt
Lemon Rosemary Melting Potatoes
Roasted Chicken with Lemon Zest & Rosemary Sea Salt

- 1 (3 1/2-pound) whole chicken
- 2 ½ teaspoons Lemon Rosemary Sea Salt
- Olive oil
- One lemon cut into slices
- Three rosemary stems
- 2 teaspoons black pepper
- Brush the chicken with olive oil and season it inside and out with our Lemon Zest and Rosemary Sea Salt and pepper.
- Heat oven to 450 degrees. Place chicken breast-side up in a roasting pan or large ovenproof skillet. Place the lemon slices and the rosemary stems around the chicken
- Roast 50 minutes, then baste chicken with pan juices. Continue roasting until chicken's juices run clear when skin is pierced with a knife, 5 to 10 minutes longer. Let stand 10 minutes before carving.

Ingredients
- 3 pounds Yukon gold Idaho potatoes
- 6 Tablespoons unsalted butter (melted)
- 1 Tablespoon lemon juice (plus sliced lemon if desired)
- 1 Tablespoon chopped fresh rosemary
- 1 teaspoon Kosher salt
- 1/2 teaspoon black pepper
- 1 1/4 cups chicken broth
- 1 teaspoon minced garlic
Instructions
- Preheat the oven to 475 degrees. Peel the potatoes and chop off the ends so they're flat. Slice the potatoes into about 1 inch thick slices.
- Combine the melted butter, lemon juice, rosemary, salt, and pepper in a bowl. Place the potatoes in a single layer in a 9 x 13 inch baking dish. Pour the butter mixture evenly over the top.
- Roast for 15 minutes. Take the dish out and flip the potatoes over. Roast for another 15 minutes. Remove the dish and flip the potatoes one more time. Combine the chicken broth and garlic and pour over top. Add lemon slices as well, if desired. Return to the oven and roast for a final 15-20 minutes or until potatoes are golden brown and tender. Serve hot with the liquid from the bottom of the pan.
Zesty Rosemary-Lemon Shortbread

Ingredients
For the Shortbread Dough
- 1 cup (226g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- Zest of 1 large lemon
- 1 tsp finely chopped fresh rosemary
- ½ tsp salt
- 2¼ cups (280g) all-purpose flour
For the Salted Lemon Glaze
- 1 cup (120g) powdered sugar
- 1½–2 tbsp fresh lemon juice
- ½ tsp lemon zest
- Pinch of flaky sea salt (for topping)

- 🧈 In a large bowl, cream butter, sugar, lemon zest, and rosemary until light and fluffy (about 2–3 minutes).
- Add salt and flour, mixing until the dough comes together—don’t overwork. Form into a disk, wrap in plastic, and chill for at least 30 minutes.
- Preheat oven to 160°C (325°F). Roll out dough on a lightly floured surface to about ¼ inch thick. Cut into rounds or desired shapes.
- Place cookies on a parchment-lined tray and chill again for 10 minutes (for clean edges).
- Bake for 14–16 minutes, until lightly golden at the edges. Cool completely.
- For the glaze, whisk powdered sugar with lemon juice and zest until smooth and slightly thick. Drizzle over cooled cookies and sprinkle lightly with flaky salt.

Perfect on biscuits or bread.

- ½ cup butter (soft)
- 2 tbsp honey
- ¼ tsp lemon rosemary salt
Instructions
Whip everything together.

- 2 lbs potatoes (quartered)
- 2 tbsp olive oil
- 1–2 tsp lemon rosemary salt
